Pork Tenderloin with Pomegranate Sauce

A fabulous main course for a winter feast.

Curried Chicken Soup

SERVES
4

INGREDIENTS
3 cups chicken broth
1 13.5-oz can unsweetened coconut milk
¾ cup chopped scallions
2½ tablespoons curry powder
¼ cup Wild Thymes Indian Vindaloo Curry Dipping Sauce
4 large boneless, skinless chicken thighs, cooked and chopped into ½ - inch cubes
1 6-oz package of baby spinach leaves
3 tablespoons lime juice
Salt & pepper to taste
¼ cup fresh chopped cilantro

DIRECTIONS
Combine first 7 ingredients and cook until warmed through and spinach leaves wilt. Add lime juice and salt and pepper to taste. Divide soup into serving bowls and sprinkle with cilantro.
